Have you looked at Cancun (or the Riviera Maya) and Huatulco in Mexico?... your dollar still goes a long way down there. The Riviera Maya have some of the nicest resorts in Mexico and Huatulco is a newer destination. I have only been to Huatulco when we visited my wife's family (so I cant really comment on the resorts) but the water is crystal clear. You can see the fish swim around your feet when the water is up to your chin. I have never been to Los Cabos so I can't comment about that and i would stay away from Acapulco as its really dirty compared to the others.
